Filet mignon en croûte, a classic of French cuisine

Pork tenderloin is an eternal classic of French gastronomy, and a favorite with cordon bleu cooks. This is the most tender part of the animal.

The recipe for filet mignon en croûte is even easier to prepare. Wrapped in puff pastry, filet mignon is ideal for pairing with a wide range of wines, thanks to its fine, light and refined taste.

However, there are certain bottles to be avoided if you want to successfully pair wine and food with this dish. In particular, avoid wines that are too tannic and woody, which may mask the taste of the meat.

It’s worth noting that many red wines go perfectly with filet mignon. Fruity, invigorating reds with silky tannins are particularly well-suited to melting meat.

What to drink with a filet mignon en croûte?

Chénas, Beaujolais wine

Chénas is the smallest Beaujolais appellation. His wines are generous, full-bodied wines that are soft on the palate, with flowery, slightly woody notes.

Here, the Gamay grape expresses notes of black berries, rose and light spices over mellow tannins.

The attack on the palate is lively, with low acidity and finely structured tannins counterbalanced by the fleshy character of Chénas, making it an ideal match for the rustic recipe of filet mignon en croûte.

Faugères, Languedoc wine

Faugères red wines are a blend of Carignan, Cinsault, Grenache, Mourvèdre, Syrah. These are full-bodied wines, structured by fine, silky tannins. On the palate, the attack is powerful, with dense, deep, fleshy tannins.

The nose reveals aromas of ripe red and black fruits, while the second nose reveals notes of coffee, spices, black pepper and thyme. As it evolves, it will open up to animal and cigar-box notes. Rich and expressively fruity, Faugères is perfect for a main course such as filet mignon en croûte.

Chinon, Loire Valley wine

Chinon is a light red wine from the Loire Valley. Sound aromatic bouquet delivers aromas of red fruit, black fruit and sometimes spices such as cinnamon, vanilla and cardamom. Young Chinons are supple, aromatic and fruity on the palate, while ageing wines are more structured and full-bodied. The aromatic bouquet of Chinons de garde develops chocolate, spice and smoke notes.

These are light, dry, finely oaked wines with low tannin levels. perfect with filet mignon en croûte.
