The choice of white or red wine will depend very much on personal preference. The wine-raclette pairing must be able to bring out the flavors created by the combination of the melting texture of the potatoes and the comforting taste of the cheese that takes hold on the palate. If, on principle, with a cheese-based dish, we tend to prefer a white wine, it’s also possible to drink a red wine with a raclette.
If wine isn’t your priority for this convivial meal, keep it simple! Choose a white wine that’s not too dry to accompany the “fat” of raclette, or a red wine that’s not too tannic and goes well with charcuterie.
