The history of the estate

 

Domaine Les Tournais is located at the crossroads of the Saint-Polycarpe Valley and the Upper Valley of the Limoux appellation. Situated at an altitude of 250 m and up to 450 m, this terroir is part of the foothills of the Pyrenees, and stands out for its character and its environment, which is ideal for growing vines. Mathieu Dauvergne has been at the helm of this vineyard since 2011.

Driven by a genuine desire to respect these terroirs and the environment, the owner of Domaine Les Tournais is fully committed to certified organic farming.

Terroir and vineyard characteristics

What about the terroir that characterizes Domaine Les Tournals? This is a unique terroir with a gravelly clay-limestone soil tempered by a mid-altitude climate. The area’s particular climatic conditions predestined it for vine-growing. In fact, prolonged ripening is possible thanks to a climate that is both humid and cool, which is particularly conducive to the production of high-quality white grape varieties.

Converted to 100% organic production, Domaine Les Tournals offers lovers of fine wines single-varietal cuvées featuring Merlot and Sauvignon Blanc. The slow ripening that characterizes our vines helps preserve the freshness and liveliness of the wines they produce.

Concerned with preserving biodiversity and soil life in his vineyards, Mathieu Dauvergne favors permanent, entirely natural grassing of his vines. This process is controlled by means of a mowing system, without any manual labor.

Estate wines

Domaine Les Tournais has no shortage of great wines, but several of them are a must for the most discerning connoisseurs.

This is particularly true of its 2018 Sauvignon, a balanced, nuanced wine aged on fine lees in terracotta jars. The blend offers a rich palette of aromas, including a bouquet of white flowers and hawthorn. On the palate, it will seduce you with its aromas of apricot, peach and yellow fruit.

The Domaine’s 2019 Merlot features a 100% Merlot varietal. After vinification in vats, 2/3 of the wine was aged for 12 months in barrels over five years old, and 1/3 in terracotta jars. Ideal for roast meats and entrecote steaks, this wine has a wide range of aromas and a bouquet of prunes and black fruits.

Finally, Sauvignon Blanc 2019 has a 100% Sauvignon Blanc grape variety. This wine was vinified in vats and aged on beds for 12 months. This aromatic wine seduces with its balance, subtle citrus notes and passion fruit finish. Ideal with seafood or exotic cuisine.
