Château de Saint-Aubin stands majestically along the Burgundy Grands Crus route. Ideally located south of Beaune, in the appellation area adjacent to the eponymous village, Château de Saint Aubin is today as famous for the wines it produces as for the hotel and wine tourism experiences it offers.

Historical roots

Château de Saint-Aubin, while not as well known as its illustrious neighbors Château de Pommard and Château de Meursault, has nothing to be ashamed of. It remains one of the oldest in the region, with over 300 years of history. Owned in its early days by the Comtesse de Trébon, descendant of a musketeer under Louis XIII, the estate changed hands several times.

Since 2010, Château Saint-Aubin has been managed by Maison Prosper Maufoux. The latter is building on its long-standing reputation. In 1960, a notary by the name of Prosper Maufoux decided to change direction, and went into the wine trade. Following the purchase of a private mansion in Santenay, and a partnership signed in 1947 in the United States, the Maison name became a benchmark in France and across the Atlantic.

Today, the Piffaut family is at the helm of this historic company. Following the purchase of the Château in 2019, a new path has opened up for the estate, between hotels and wine tourism experiences.

A terroir in the heart of the Côte de Beaune

The Côte de Beaune arises to the south of the Côte de Nuits. The two together form the highly prestigious Côte d’Or. It is planted almost exclusively with Pinot Noir and Chardonnay. However, in terms of prestige (although, once again, there are many exceptions), we tend to schematize as follows: the best reds in Burgundy come from the Côte de Nuits, and the best whites from the Côte de Beaune.

Château de Saint-Aubin is not one of the exceptions; on the contrary, it cherishes the one and only Chardonnay, the region’s king grape variety. Located south of Beaune, the domaine enjoys a slightly sunnier terroir, with complex soils derived from a combination of limestone, clay and red clay. Some of the vines, grown using sustainable viticulture methods, are located just a few meters from the Château, in the Clos du Château climat, classified as a Premier Cru in the Saint-Aubin AOC.

Prosper Maufoux wines

Maison Prosper Maufoux’s winemaking reflects Burgundy’s ancestral heritage and the know-how for which it is renowned. A distinction must be made between Prosper Maufoux wines, planted with traditional Burgundy grape varieties in various appellations throughout Burgundy (Chablis, Pommard, Bouzeron …). Wines sold under the name Château de Saint-Aubin Prosper Maufoux, on the other hand, come exclusively from the Saint-Aubin area and are made from Chardonnay only.

This is a dry, generous white wine, which the bâtonnage process and oak barrel ageing have softened and made gourmand. Delicate notes of white flowers and almond make it the ideal match for shrimp tartare with lemongrass and ginger, or codfish plancha with creamy asparagus and hazelnut risotto.
