After a meal or an aperitif, we sometimes have a little wine left in a bottle. Either there’s not enough left to serve it again, or it’s a bit old after opening. There’s no way I’m throwing this leftover down the sink, no, no, no!

Twil gives you a few good recipes for using wine bottle bottoms.

Wine, an ally for flavourful dishes!

To add flavor and character to a dish, it can be deglazed with white or red wine. With cooking, the alcohol evaporates, leaving only the taste. It can be used for meat sauces such as boeuf bourguignon, stew sauces like Bolognese or fish sauces, in risottos or, more surprisingly, in cakes. The white wine is perfect for a savory cake served as an aperitif, and the red wine for a chocolate cake.

Recipes

New potatoes with white wine

After peeling the potatoes and browning them in a pan, add the garlic, thyme, bay leaf, pepper and
dry white wine
in a saucepan. The white wine will give the potatoes a subtle, pleasant taste.

Leave to simmer, uncovered, until the liquid has almost evaporated (it thickens at the end and caramelizes). We only want the taste of white wine, not the alcohol!

Finally, let yourself be surprised by a delicious dish without having wasted the bottom of your bottle of white wine.

 

Linguini “Carbonara” with red wine

After cooking your pasta and sautéing your lardons with onion, pour in the rest of your bottle of
red wine
. Allow to evaporate a little (the more it evaporates, the thicker the sauce will be). Finally, add the mascarpone and mix well to dilute. Add the crème fraîche and a little salt and pepper.

A little garlic and/or Espelette pepper can be added before the wine to spice up the sauce.

It’s up to you to adjust the dose according to your taste preferences!

Vegan red wine chocolate cake

This recipe couldn’t be simpler! Simply whisk all the ingredients together (Click here to see all the ingredients). When it comes to adding wine, you’re free to decide on the dosage and the type of wine. The most important thing is the cooking time. Opt for 40 minutes at 180° so that it’s cooked through and the alcohol has evaporated (especially if you’ve had your hands full).

Leave to cool, then enjoy your wonderful chocolate cake made with
red wine
.

 

From now on, you won’t have to throw away your bottle bottoms, and you’ll be able to enjoy them in your dishes!
