The Maison S. Delafont, created by Samuel, a creative wine lover

After ten years at the head of a company offering advice to Languedoc winegrowers, Samuel Delafont decided in 2010 to work as close as possible to the wine itself. He created Maison S. Delafont and developed his trading and winemaking activities, in order to be freer and more creative, and to be able to accompany wines from vine to bottle.

This creative urge was then translated into the creation of a stainless steel barrel. In fact, Samuel was not satisfied with the results of maturing in wooden barrels or stainless steel tanks. He has thus retained the advantages of both, by designing a stainless steel barrel with a small capacity, highly curved to optimize the surface area of the wine in contact with the lees, and to avoid micro-oxygenation. Wines matured in this way retain their fresh, fruity character and good length. Maison S. Delafont produces unique wines. Delafont.

Environmentally-friendly methods

Maison S Delafont grows its vines on two different vineyards, one in the Cévennes PGI, the other in Limoux. These plots are managed according to permaculture principles. No pesticides are used, and plant diversity is maintained, with the presence of trees and wild legumes between the rows, which are left grassed. This plant grows until late spring, when it is cut back to form a carpet of vegetation around the vines, protecting the soil from the summer sun. These practices also help to maintain ecosystems, as evidenced by the presence of insects, birds and bats, for example.

This protection of the vines continues in the cellar, where sulfites are present in very small quantities, well below the minimum recommended doses, or even completely absent. The trading side of the business also meets his requirements, selecting winemakers who share his commitment to protecting biodiversity and creating healthy products.

The cuvées of Maison S. Delafont

Maison S. Delafont offers a range of wines typical of the Languedoc Roussillon region, as well as a “Mosaïque” range, which is intended to be younger and more supple. These are easy-drinking, gourmet wines.

Pic Saint Loup is a blend of Grenache, Mourvèdre and Syrah. It has a ruby-red color with purple highlights. The nose is marked by scents of garrigue, red and black fruits and spices. Fresh and spicy on the palate, with mineral notes and a pleasant freshness.

La Clape is a cuvée also made from Grenache, Mourvèdre and Syrah grapes. Deep, dark red in color, with a complex nose of spices and black fruits. Fresh and round on the palate, with silky tannins.

Cuvée Mosaïque rouge is characterized by a deep red color, a nose rich in red and black fruits, and a gourmet, fresh palate with fine tannins.

Mosaïque is a white wine with a light golden color and yellow highlights. Its nose evokes exotic fruits, white flowers and pear. Round on the palate, with a fresh, elegant finish.
