Food & wine pairing: pizza

Pizzeria

With spring just around the corner, pizza is a welcome accompaniment to evenings of conversation and sunset. Simple and so customizable to suit our tastes, it’s one of the French’s favorite meals, since France is the world’s second biggest consumer.

But which wines to choose to enhance it?

The classic: Margherita pizza

To honor Marguerite of Savoy, wife of King Humbert I of Italy, chef Raffaele Esposito invented a pizza in the national colors: tomatoes for red, mozzarella for white and basil for green. The queen loved it, let it be known, and the pizza went around the world.

In the case of margherita, the lamb’s lettuce, the fat of the cheese and the saltiness of the pasta and tomato sauce call for a lively white wine to titillate the sweetness of the dish. Fattoressa Maddalena, Villa Cosmiana is the Twil committee’s favorite. A wine from the Tuscan countryside, rounder and more intense than a traditional trebbiano. Rich on the palate, with aromas of apricot and honey delicately toasted, it’s the perfect accompaniment to margherita.

More classic,
Château De Malherbes white
is rated 92/100 by Wine Enthusiast. A beautiful Sauvignon Sémillon with pleasant aromas of small flowers and white-fleshed fruit. Full-bodied and voluminous on the palate, with hints of hazelnut. Perfect for reviving the simplicity of the dish.

The Mediterranean: pizza with sunny vegetables

Italian wines

Pizza goes very well with red wines, but don’t choose just any wine. It should be light and fruity to highlight the ingredients. Cipressi, Michele Chiarlo is a particularly fruity Italian wine. Parker gives it a score of 91/100. The nose reveals a rich bouquet with notes of ripe red fruit and light tobacco. A well-balanced wine between opulence and freshness. The finish is long and sapid.

Still in Italy, head for Sicily with a Nero d’Avola whose aromas of red berries, spices and licorice, along with mellow tannins, are the perfect accompaniment to your pizza.

French wines

In France, Beaujolais wines are the perfect answer. But you can also set your sights on a Beaujolais,
Beaujolais-Villages
or a Chiroubles cru,
Brouilly
or a
Saint-Amour
. The wines of
Côtes du Rhône
are also perfect with pizza, especially when topped with olives and sun-dried vegetables.

To vary the pleasures, Bandol rosé is an ideal accompaniment to eggplant pizza, for example. Hautes Terres, Moulin De La Roque is the reference we offer you. Organic, well-structured and affordable, this is a rosé that should be drunk chilled. You can go there with your eyes closed!
