id=\"p52\">&#8220;You&#8217;ve probably heard <span id=\"54\" class=\"s-bl-t\">this<\/span> phrase while tasting organic or natural wines with your bobo friends in a wine cellar in eastern Paris or in Lyon&#8217;s Croix Rousse district!<\/span><span id=\"p2\">  They may deplore the workings of mechanical harvesting and praise the benefits of manual harvesting, but for you, this practice remains rather abstract.<\/span><\/p>\n<p><span id=\"p3\">Don&#8217;t worry, today we&#8217;re going to introduce you to these two types of harvest and their respective advantages and disadvantages.<\/span><\/p>\n<p>&nbsp;<\/p>\n<h2><span id=\"p4\">The harvest<\/span><\/h2>\n<p>&nbsp;<\/p>\n<p><span id=\"p7\">Once the grapes have reached maturity, they need to be harvested by the winemaker.<\/span><span id=\"p8\"> For this, there are a number of solutions:<\/span><span id=\"p9\"> either by hand <span id=\"p6\">(manual harvesting)<\/span>, or by machine <span id=\"p5\">(mechanical harvesting)<\/span>.<\/span><span id=\"p10\"><\/span><\/p>\n<p><span id=\"p12\">The choice of harvesting method depends on a number of factors, including the fragility of the grapes <span id=\"p11\">(some grapes, such as <a href=\"https:\/\/vin-champagne.ouest-france.fr\/pinot-noir\/\">Pinot<\/a><\/span> Noir, <span id=\"p11\"> cannot withstand machine picking, whereas <a href=\"https:\/\/vin-champagne.ouest-france.fr\/cabernet-sauvignon\/\">Cabernet Sauvignon<\/a> is much more <span id=\"40\" class=\"s-bl-t\">robust<\/span>)<\/span>.<\/span> <span id=\"p13\"> We can also look at the opportunity cost:<\/span><span id=\"p14\"> manual harvesting is much more expensive than mechanical harvesting, but it also preserves the quality of the grapes much better.<\/span><span id=\"p15\"> The winegrower&#8217;s role is therefore to arbitrate between these two <span id=\"41\" class=\"s-rg-t\">models<\/span> and strike the right balance between cost and opportunity.<\/span><\/p>\n<p>&nbsp;<\/p>\n<h2><span id=\"p16\">Mechanical harvesting<\/span><\/h2>\n<p>&nbsp;<\/p>\n<p><span id=\"p17\">In mechanical harvesting, machines equipped with beaters pass through the vines and drop the bunches onto a moving conveyor belt.<\/span><span id=\"p18\">  A fan inside the machine removes most of the leaves.<\/span><span id=\"p19\"><\/span><\/p>\n<p><span id=\"p20\">The brutality of this type of harvest is not ideal for preserving the quality of the grapes, especially the white varieties.<\/span><span id=\"p21\"> Highly reputed crus in <a href=\"https:\/\/vin-champagne.ouest-france.fr\/sauternes\/\">Sauternes<\/a>, Burgundy and Champagne almost never use manual harvesting.<\/span><\/p>\n<p><span id=\"p22\">However, mechanical harvesting is relatively inexpensive, and the purchase of a machine enables the winegrower to achieve economies of scale.<\/span><span id=\"p55\">  What&#8217;s more, the speed of mechanical harvesting is quite useful, enabling us to pick grapes at just the right moment without some bunches rotting on the vine.<\/span><\/p>\n<p>&nbsp;<\/p>\n<h2><span id=\"p24\">Manual harvesting<\/span><\/h2>\n<p>&nbsp;<\/p>\n<p><span id=\"p25\">Hand-picked grapes are, as the name suggests, <span id=\"45\" class=\"s-ve-t\">harvested<\/span> by hand.<\/span><span id=\"p26\">  The grapes are usually stored in crates of varying sizes, depending on the grower&#8217;s requirements:<\/span><span id=\"p27\">  the smaller the crates, the better the quality of the grapes.<\/span><span id=\"p28\">  Moreover, transport to the winery in openwork crates allows the juice to run off instead of oxidizing or causing micro-fermentation.<\/span><\/p>\n<p><span id=\"p30\">Although manual harvesting is more costly <span id=\"p29\">(a lot of <span id=\"46\" class=\"s-rg-t\">labor<\/span> to pay)<\/span>, tedious and time-consuming, it is necessary in vineyards with poor access or on hillsides.<\/span><span id=\"p31\"> In the <a href=\"https:\/\/vin-champagne.ouest-france.fr\/beaujolais-et-lyonnais\/\">Beaujolais<\/a> region, hand-picking is compulsory to enable whole bunches to be harvested.<\/span><\/p>\n<p><span id=\"p33\">Moreover, while hand-picking ensures that the quality of the grapes is preserved, it also enables the winemaker to harvest each grape at the precise moment that corresponds to the desired ripeness <span id=\"p32\">(for sweet wines, for example)<\/span>.<\/span><span id=\"p34\">  As this method is very time-consuming and costly, it has a real impact on the cost of the bottle.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><span id=\"p35\">In short, the choice between these two types of harvest depends on the winemaker&#8217;s cost\/benefit calculation and the constraints imposed by his terroir.<\/span><span id=\"p36\"> Today, <span id=\"47\">60%<\/span> of French vineyards are mechanically harvested, <span
