Classified as a regional appellation in the nomenclature of Burgundy appellations, Bourgogne Aligot\u00e9 is common to all of Burgundy.  <\/span><\/p>\n<p><span style=\"font-weight: 400;\">This AOC is unique in that it is produced exclusively from the Aligot\u00e9 grape variety, whereas the vast majority of Burgundy&#8217;s white wines are made from Chardonnay. It is also the only Burgundy appellation to mention a grape variety.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Recognized since 1937, this AOC today covers almost 1,600 hectares of vines on predominantly clay-limestone soils in a temperate, oceanic climate with continental trends.<\/span><\/p>\n<h2>Tasting and gastronomy<\/h2>\n<p><span style=\"font-weight: 400;\">A dry wine, <a href=\"https:\/\/www.twil.fr\/france\/bourgogne\/bourgogne-aligote.html\">Bourgogne aligot\u00e9 is best drunk young<\/a> (3 years maximum) and is ideal for making a kir (a cocktail based on cr\u00e8me de cassis and bright white wine).<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The color is quite light, pale gold and mineral. But it can also be straw yellow. On the nose, Aligot\u00e9 offers a floral (acacia and hawthorn) and fruity (apple) bouquet. Aromas vary according to terroir: aligot\u00e9s from Pernand have a fruity nose, while those from Saint-Bris have more elderberry notes. Tender and elegant on the palate, with lemony notes and a tangy finish.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Pair it with snails \u00e0 la bourguignonne, a terrine or shellfish.
